Hôtel de Crillon Reopens L’Herbier Secret: One Table, 5 Courses

L’Herbier Secret returns to Hôtel de Crillon today, built around one table, four to six guests and five courses.

The private dinner resumes on 27 August after a first summer run that closed on 25 July. Bookings run Thursday to Saturday until 25 September, on a second-floor terrace that looks into the hotel’s own Parisian interior rather than out over Place de la Concorde.

It is also the first public sight of executive chef Alan Taudon’s cooking at the Crillon, ahead of the permanent gastronomic restaurant planned for 2027.

One table means one party

A single group each evening. Nobody else.

The table seats four to six, which puts the evening closer to a private chef’s table than to a restaurant reservation. No surrounding dining room, no sequence of arriving tables, no other party to share the terrace with.

Consequences follow.

A couple cannot expect two seats to be sold on their own. The party has to be assembled around the minimum number, the chosen date and the hotel’s booking conditions, which suits a family, a close group, a client dinner or a small professional occasion where everyone already knows why they are there.

It suits nobody looking for a lively Paris room, a spontaneous late table, or an evening where watching the other guests is half the point.

Plant-led is not the same as vegetarian

Hôtel de Crillon describes the five courses as plant-led, with coastal influences.

That wording follows Taudon’s long interest in vegetables and marine produce. Read it as a direction rather than as a vegetarian or vegan tasting menu, because the balance between plants, fish and other coastal ingredients moves with the season and with the evening.

Food and wine pairings are part of the offer. Current menus are not published, which protects the discovery and makes a direct conversation essential for allergies, pregnancy, religious restrictions or any other dietary requirement.

Raise all of it before the booking is final, because a kitchen cooking five courses for one table has built the evening around a fixed sequence, and an entire alternative menu invented on the night is not what this format is for.

Alan Taudon took the Crillon kitchens in June

Taudon became executive chef on 1 June 2026.

His remit covers the hotel’s dining operations: L’Herbier Secret, Jardin d’Hiver, room service, events. He also works with Paul Pairet on Nonos & Comestibles, the hotel’s French grill and provisions concept.

Before the Crillon he led L’Orangerie at Four Seasons Hotel George V. Earlier came Yannick Alléno and Christian Le Squer, then several years building a style known for precise sauces, vegetables and the sea.

So this is not a detached summer promotion. Rosewood calls it a prelude to the culinary world Taudon will show more fully later, and the description holds.

The permanent gastronomic restaurant is planned for 2027

The Crillon’s previous gastronomic restaurant closed at the end of 2025. A complete transformation of the space is under way, with a new identity, interior and culinary concept expected in early 2027.

L’Herbier Secret buys the hotel a way to introduce Taudon’s cooking while that work continues.

One table also makes a controlled laboratory. Pacing, dish structure, guest response, the relationship between plants and marine ingredients: all of it can be studied without the service load of a full dining room.

And it keeps the Crillon gastronomically present during the rebuild. A palace hotel cannot switch off its culinary ambition for a year and expect to switch it back on.

What comes in 2027 may share none of this menu, price or intimacy. Treat the pop-up as an indication of direction, not as a small version of the finished restaurant.

A terrace instead of a private salon

Private dining in a palace hotel usually means a formal salon, a cellar or an enclosed room built for events.

L’Herbier Secret sits outdoors, on the second floor. The scale is residential, with planting and aromatic herbs forming part of the setting, and the party is separated from the hotel’s public restaurants without the evening becoming a banquet-room booking.

That places it usefully between several Paris categories.

More structured than hiring a chef for a private apartment. More private than a table in a Michelin-recognised dining room. More culinary than taking a salon for an event.

Whether it is worth the money will come down to the food and the service rather than to the absence of other guests. Privacy improves the conversation, and it removes the energy a strong public restaurant generates.

What it currently costs

Rosewood’s original summer announcement priced the first run at €250 per person, with a wine pairing at €140. Independent coverage of the full 2026 programme carried the same figures across to the August and September dates.

The booking page shows no price today.

Reconfirm the final cost, the pairing arrangement, cancellation terms and any minimum charge directly with the hotel before you build travel around the date.

At those published figures a party of six meant €1,500 of food before wine and any extras. Below the cost of taking a large private room, well above an ordinary hotel restaurant bill.

You are buying the whole evening, not five courses.

How to book the second run

The second 2026 season runs from 27 August to 25 September.

Dinners are Thursday through Saturday, one table, four to six guests. Requests go through the official L’Herbier Secret page or the Crillon’s restaurant reservations team.

Before confirming, establish:

  • the final number of guests;
  • all dietary restrictions;
  • the current per-person price;
  • whether the wine pairing is optional;
  • the cancellation and deposit conditions;
  • the contingency plan for bad weather;
  • the expected duration of the dinner.

September makes the weather clause the one that matters, so ask the booking team directly whether dinner moves indoors, is rescheduled, or follows some other arrangement on the evening the terrace cannot be used.

Luxury.it perspective

L’Herbier Secret works because it does two jobs and does not pretend they are one.

For the guest it is a private dinner in one of the great Paris palace hotels. For the Crillon it is a measured introduction to Alan Taudon before the permanent gastronomic restaurant arrives in 2027.

One table is not proof of excellence. Scarcity produces access pressure, nothing more. The better argument is that the hotel has given a new executive chef a small, visible stage on which to develop his language while the larger room is rebuilt around him.
