Berton & Friends at Bawe Island: 3 Chefs, 2 Meals, 1 Week

Andrea Berton, Cristina Bowerman and Ernst Knam will cook at Bawe Island from 22 to 29 November 2026. Two Michelin stars and Italy’s best-known chocolatier, on an island off Zanzibar, for one week. The Cocoon Collection has borrowed its format, and almost its name, from Pavarotti & Friends.

The appeal, for anyone weighing several nights in a pool villa against a trip organised around restaurants, is that you get both. A shared occasion, then a door of your own to close behind you. Nobody has to eat seven consecutive tasting menus for the week to be worth the flight.

Two of the seven days are the ones that matter.

Two meals to plan around

The guest announcement of 16 September identifies a beach cooking-show lunch on 25 November and a gala dinner on the 27th, the gala opening with a sunset aperitif before a menu written for this first edition. One note on sourcing: those two internal dates appear in the organisers’ own announcement and we could not reach a second published source for them, so confirm both when you book.

A couple travelling chiefly for the cooking should start from those two dates and pick the villa afterwards, because arriving on the 26th or leaving on the 26th produces a completely different holiday while still technically falling inside the advertised week that everyone will have booked.

The Italian announcement puts this inside a wider plan: after Zanzibar the format moves to the group’s Maldives resorts, with different chefs each time. Judge this edition on its own terms. Berton has held a Michelin star at his Milan restaurant since 2014, Bowerman one at Glass Hostaria in Trastevere since 2010, and Knam has been making chocolate in Milan since 1992.

A villa between the tables

Bawe publishes 70 independent villas, each with a private pool and a dedicated butler. The resort calls itself the first and only one-island-one-resort in Africa, which is true and still means a resort on an island rather than an island to yourself.

Five categories exist; three matter for a trip built around food. Lagoon Suite With Pool is overwater on the east side, 170 m². Sunset Suite faces west at 240 m², with what the resort calls a large lowered living area. The two-bedroom Zanzibar Villa runs to 310 m² and adds a kitchen. Above them sits the 500 m² Sultan Palace, for up to nine. All published areas, none measured by us.

Two couples should price the Zanzibar Villa against two separate villas before assuming the bigger number wins. Sharing a living room is the whole point of travelling together for some parties and the thing that ruins it for others. Decide that first.

That kitchen opens a possibility worth using: one quiet dinner at home. The resort’s own wording for the Zanzibar Villa is “kitchen available for exclusive ‘in villa dining’ with Chef on demand”. Read it carefully. That is the resort’s chef, not Berton, and nothing published suggests the visiting three can be commissioned privately.

What happens on the other evenings?

Five venues already operate. The Sand is the main restaurant, and instead of a floor it has sand. Sinfonia does Italian, with a wood-fired oven. Rising Sun cooks teppanyaki under an old baobab. The View Bar sits up top over the Indian Ocean, and the Beach Club handles the casual end.

During this week their usefulness is precisely that none of them is a gala. Keep one night for a plate of pasta at Sinfonia and nothing else in the diary. A holiday built around two big meals needs ordinary ones in between.

One policy to know about. The Beach Club caters “exclusively to adults from 10 am to 6 pm”, in the resort’s words. That is one venue between two times, and it says nothing about the rest of the island or about the chef programme. Families should ask specifically whether children can attend the lunch and the gala.

Reserve the experience as well as the room

A meal plan and a named-chef dinner are not automatically the same purchase. Nobody publishes a price for this week, a supplement for the gala, or a statement that any room rate covers both meals. We looked.

So ask for a written proposal naming the villa, the dates, the meal plan and the event access, with drinks and dietary arrangements included, and check that it covers both of you at both meals rather than one seat at each. A larger party should settle table allocation before anyone starts calling the gala a private celebration.

Getting there is published and short: thirty minutes by car from Abeid Amani Karume airport, then fifteen minutes by speedboat out of Stone Town, with a helicopter available on request. Put it in the same quotation anyway, especially when a flight lands near one of the two meals. Better an extra night than a connection for dessert.

The right reason to go

Anyone who knows Berton from Via Mike Bongiorno in Milan will find the context unrecognisable. That is the attraction: three cooks who do not normally share a kitchen, and a villa with a pool waiting at the end of the evening instead of a lift to the fourth floor.

Build the week around the 25th and the 27th, then leave the rest alone. Slow breakfasts, a swim, one evening with no reservation at all.

The Luxury.it perspective

Borrowing the Pavarotti & Friends shape is cleverer than it sounds. A guest-chef week usually means one cook flown in to repeat their greatest hits; this one puts a savoury chef, a second savoury chef with a different city behind her and a pastry chef in the same room, which is a harder and more interesting thing to organise.

Our reservation about it is the silence on money. No price for the week, no supplement for the gala, nothing said about whether a full-board rate covers either meal. For a resort where the villas start at 170 square metres, that is a conversation worth having before the deposit, not after.

Book the 24th to the 28th if you can. Two nights either side of the gala, with the cooking show in the middle, and the fifteen-minute boat back to Stone Town on a morning nobody has to hurry.
