Oetker Hotels will open Le Mas Bellevue in Saint-Tropez in June 2027, with 78 rooms and suites. The group confirmed the month this week, when it named the hotel’s first general manager, Géraud Tournier, who has run Château Saint-Martin & Spa and L’Apogée Courchevel since 2022. It will be Oetker’s first hotel in Saint-Tropez, a hamlet of 11 houses on a hillside between the town and the beaches of Pampelonne. On the Riviera it joins Hotel du Cap-Eden-Roc at Antibes and Château Saint-Martin & Spa at Vence. The month is set. The day is not.
78 rooms and suites in a hillside hamlet
The figures are on Oetker’s page for the hotel. Each of the 78 rooms and suites will have a private terrace or patio, and they are spread across 11 interconnected houses that the group describes as a secluded hillside hamlet in landscaped gardens. There will be an oversized infinity pool, a wellness facility, a bar and a restaurant, with views of the surrounding countryside and the sea. The town of Saint-Tropez and the Pampelonne beaches, in Ramatuelle, are each about five minutes away by car. The hotel will be rebuilt on the site of the former Le Mas Bellevue. It keeps the name. The materials are natural ones: aged tiles, local stone, climbing plants and wooden pergolas.
Triptyque and Gilles & Boissier: the design
The project was first announced in December 2024, under the Oetker Collection name. The architects are Triptyque, the French-Brazilian studio whose founding partner, Olivier Raffaëlli, was named as the architect in 2024. The interiors are by Patrick Gilles and Dorothée Boissier of the Paris studio Gilles & Boissier. The 2024 plan counted 53 rooms and suites and gave the opening as “in time for the 2027 season”. The hotel now has 78, still in 11 houses, and a month. Boissier explained the idea at the time with an image from the water: “Unlike a yacht, where layers separate you from the sea, here, everything is within reach.” The same announcement spoke of gardens of native plants and olive trees, and gave the hotel a short line of philosophy, “What you have is all you need”.
“I want guests to feel the elegance and ease of a refined retreat, alongside the fun, generosity and social energy that make Saint-Tropez so special.” Géraud Tournier, General Manager, Le Mas Bellevue
Géraud Tournier, from head sommelier to general manager
Tournier has spent more than a decade with Oetker Hotels, according to the group’s announcement. He joined Château Saint-Martin & Spa in Vence as head sommelier, moved to the opening team of L’Apogée Courchevel the following year, and has been general manager of both since 2022. Before that, he was a sommelier at Pavillon Ledoyen in Paris and at Le Louis XV in Monaco. He keeps L’Apogée Courchevel alongside the new hotel. Simon Bannelier, who has worked with him for many years, becomes general manager of Château Saint-Martin & Spa and stays on as his deputy in Courchevel. A graduate of Rennes School of Business, Bannelier rose through the front office and operations of the same two hotels. “Above all, we will build a team that brings the genuine warmth of Oetker Hotels to every stay,” Tournier said. “Entrusting a debut as significant as Le Mas Bellevue to Géraud reflects our confidence in his leadership and his deep understanding of our guests and values,” said Timo Gruenert, chief executive of Oetker Hotels.
Antibes, Vence and now Saint-Tropez
Saint-Tropez completes a short list. On the Côte d’Azur, Oetker already runs Hotel du Cap-Eden-Roc at Antibes and Château Saint-Martin & Spa at Vence; in France it also has Le Bristol Paris, L’Apogée Courchevel and, in the Caribbean, Eden Rock – St Barths. The collection reaches from The Lanesborough in London and Brenners Park-Hotel & Spa in Baden-Baden to Hotel La Palma in Capri and The Vineta Hotel in Palm Beach, which opened this year as the group’s first in the United States. Oetker’s site lists 12 hotels, Le Mas Bellevue included, and the group counts more than 250 villas. For the new hotel, the restaurant, the chef, the wellness partner and the room rates have not been announced. Neither has the opening day.
The Luxury.it perspective
Oetker filled both of this week’s posts from inside the group. Le Mas Bellevue’s first general manager is a sommelier by training who has spent a decade between Vence and Courchevel, and that tells you a good deal about the hotel to expect: one built around terraces, gardens and a table. The position is the other strength: five minutes from the town, five from Pampelonne, with the sea in view. A June opening gives it a whole first summer. For a stay in 2027, add it to the short list now and book once the rates are out. We will add the restaurant and the opening day here, and to our list of Europe’s new luxury hotels, as soon as Oetker publishes them.
