Bourbon Hotel Courchevel: 31 rooms and Zanoni’s Simonetta from 18 December

Bourbon Hotel opens in Courchevel 1850 on 18 December, with 31 rooms and an Italian restaurant by Simone Zanoni. The date comes from Chapitre Six, the French hotel collection it joins, which announced it on Wednesday 7 October. The hotel calls itself five-star. It sits in the Triangle d’Or, on Rue Park City, with ski-in, ski-out access to Les Trois Vallées. Three of the rooms are suites. The restaurant, Simonetta, is described as an Italian-inspired mountain trattoria, conceived by the chef who has run the kitchen of Le George, at the Four Seasons Hotel George V in Paris, since September 2016.

31 rooms in the Triangle d’Or

The hotel’s own site is brief: “31 chambres feutrées, dont 3 suites, vues montagnes”, 31 hushed rooms, three of them suites, all with mountain views. The group’s announcement fills in the rest. The interiors are by the Parisian Studio Henry. In the group’s words, “the moody, retro interiors channel the exclusive feel of a private London club”. The artistic direction is by Pierre-Alexis Guinet, who has worked with fashion houses. Below ground is the spa, in natural stone and onyx, with an indoor pool, a sauna, a hammam and the contrast therapy the hotel puts on its front page. Upstairs there is a cocktail and vinyl bar with a fireplace. Rates, room sizes and the size of the spa have not been published.

Simonetta, Simone Zanoni’s Italian table

The restaurant is the Italian thread, “adding to the strong gastronomy scene of Courchevel”, in the group’s words. The hotel presents it as “Simonetta, table italienne pensée par le chef Simone Zanoni”, an Italian table conceived by the chef, and the group says it pays homage to his Italian grandmother and to the Sunday lunches around her table. Zanoni came to Le George after years in Gordon Ramsay’s restaurants, according to the Four Seasons, which describes Le George as a Michelin-starred, modern Italian restaurant in Paris. A trattoria in the snow is a natural second address for that kind of cooking. The mountains are not new to him. In 2021 he created the menus of La Trattoria de la Taverne at the Four Seasons in Megève, according to that hotel’s release at the time. For Simonetta, the menu, the number of covers and whether non-residents can book have not been announced.

Chapitre Six, from Paris to the Alps

Bourbon joins a small collection. Chapitre Six describes its houses as “des hôtels uniques, à taille humaine”, unique hotels on a human scale, shaped by architects, artists and craftsmen. In Paris it has four: Hôtel Hana, Hôtel Monsieur George, the Bus Palladium Hôtel Club and Hôtel Monsieur Aristide. Outside the city, its site lists La Folie Barbizon, Hôtel Saint-Georges in Megève, Hôtel La Ponche in Saint-Tropez and the Cap d’Antibes Beach Hotel. A hotel in Cannes, which the group calls its flagship project, is due in 2027, after what it describes as the recent revival of the Bus Palladium. The Saint-Georges reopens on 16 October for the autumn school holidays. Courchevel itself opens for the winter on 4 December, according to the resort, and the season runs until 18 April 2027, so Bourbon arrives two weeks in, a week before Christmas. The Luxury.it perspective

Courchevel’s newest five-star is small on purpose. With 31 rooms, a vinyl bar and interiors meant to feel like a private London club, Bourbon takes the private-club route in a resort better known for its palace hotels. Simonetta gives it a second identity: a chef from a Paris palace, cooking in memory of his grandmother’s Sunday lunches, at 1,850 metres. For the first winter, ask when booking whether the restaurant and the bar open on the same day as the hotel. The group has not said.
