The Michelin Guide Italy added 20 restaurants to its selection on 16 September 2026. It is the monthly update ahead of the 2027 edition. Five are in Lazio, four in Sardinia, three in Campania, and the rest are scattered from Cortina d’Ampezzo to the island of Vulcano. None has a star yet. That is the point of the monthly list: these are the tables the inspectors want on record before the stars are decided, and the ones a traveller can still book for October without a month’s notice.
Cortina: 1224, named after the altitude
The entry with the most obvious future is 1224 Restaurant Cortina. Start there. It sits inside the Grand Hotel Savoia at Via Roma 62 in Cortina d’Ampezzo, and the name is the town’s altitude in metres. The kitchen belongs to Federico Rovacchi and the guide describes cooking of an “extraordinarily high level” that moves from the mountain territory to international references, with a wood-fired oven doing much of the work. The guide places it in its top price band. It arrives as Cortina prepares for a winter with two new hotels, The First Cortina on 4 December and Mandarin Oriental Cristallo in early 2027, which we set out in our openings calendar.
Rome: Quid, with St Peter’s in the window
Quid, at Piazza San Silvestro 8 inside Palazzo Marignoli, is the Rome entry. The name joins the initial of its resident chef, Juan Camilo Quintero, to the phrase Unique Italian Dining, and the restaurant is run in collaboration with Enrico Bartolini, the most-starred chef in Italy. The guide files it under creative, contemporary cooking, in the top price band, and singles out the view of St Peter’s from both the dining room and the terrace. It opens for lunch from 12:30 to 14:00 and for dinner from 19:00 to 21:30, closed Sunday and Monday, with the terrace open from 17:00 to midnight. No tasting-menu price is published. Four other Lazio addresses join it: Percorsi al Vecchio Ponte at Bracciano, Dieci at Nepi, where a young chef works the Tuscia larder, Convivial at Tuscania under Andrea Astolfi, and Da Aurelio at Ladispoli, the restaurant of La Posta Vecchia, the seaside villa hotel that the guide calls one of the most exclusive on the Lazio coast.
Sardinia: four entries, one in the Costa Smeralda
Sardinia has the strongest showing outside Lazio. Ulìa at Arzachena, the commune that contains Porto Cervo, enters with Salvatore Camedda’s modern Mediterranean cooking, described by the guide as balanced and contemporary and rooted in Sardinian produce. Abbamele Osteria at Mamoiada, in the Barbagia, is chef and owner Mauro Ladu’s dining room of stone walls, photographs and the village’s carnival masks. Cagliari gets two at once: Dal Pittore, for generous and colourful plates, and Aurea Osteria Contemporanea, for cooking the guide calls hard to find elsewhere. For a reader heading to the Costa Smeralda next summer, Ulìa is the one to note; for a reader who wants the island in October, Mamoiada is where the season actually is.
Turin, the coast and the islands
Akoya in Turin is an omakase counter inside Spazio Musa, a contemporary art gallery in the Quadrilatero, where Christian Mandura and Alessandro Daddea build a personal tasting sequence for each guest. Campania adds three: Seasons at Forio d’Ischia, a seafood kitchen with two evening menus called Onda Corta and Onda Lunga, Casa Scarica at Gragnano, and Osteria Arbustico at Paestum. Sicily’s entry is Trattoria da Pina di Maniaci on Vulcano, a family trattoria of Aeolian tradition. Tuscany has L’Oca Bonda at Impruneta, a fish kitchen in the hills south of Florence, and Il Pozzo at Sant’Angelo in Colle, where the sisters Franca and Paola cook the Montalcino repertoire. Calabria has Luigi Lepore’s Casa Koplè at Francavilla Angitola with menus of five, seven and nine courses; the Veneto has Bella Italia Pesce at Peschiera del Garda; Friuli has Chimera di Bacco in Trieste. Not on the list yet: Colagreco’s Cetino on Lake Como
One opening the September list does not include is the one Lake Como has been waiting for. Cetino, at The Lake Como EDITION in Cadenabbia, is Mauro Colagreco’s first restaurant in Italy, the Argentine-born chef of Mirazur at Menton crossing the border at last. It serves dinner only, from 18:00 to 22:00 daily, and has published its prices: Terra Lago, five courses at 125 euros for the whole table, with a four-glass pairing at 125, and Mare Lago, seven courses at 150 euros with a six-glass pairing at 150. Main courses on the carte run from 48 to 65 euros. The hotel around it has 148 rooms including 24 suites, furnished by Neri and Hu; we covered the opening when it happened.
Three dates for the autumn
The calendar now runs through the guides. Gambero Rosso presents its Ristoranti d’Italia 2027 on Monday 26 October at La Nuvola in Rome, the morning of the second day of the publisher’s 40th-anniversary festival, with the Vini d’Italia guide on the Sunday and the pizzerie guide the same afternoon; the Tre Forchette gala that evening brings Norbert Niederkofler, Niko Romito, Mauro Uliassi, Gianfranco Pascucci, Davide Guidara, Alberto Gipponi, Gianluca Gorini, Pietro Zito and Salvatore Tassa to the stoves. TheFork Awards follow on Tuesday 27 October at the Teatro Lirico Giorgio Gaber in Milan, with 48 new restaurants nominated by chefs. Michelin has not published the date of its 2027 Italian presentation on its site. In the meantime the autumn menus are out: Le Calandre at Rubano has published its autumn carte with white truffle across five dishes, tasting menus at 310 and 325 euros and a 20-euro supplement per truffle course, and Piazza Duomo in Alba starts its eight-course truffle menu on 1 October, as we noted in our Alba guide.
The Luxury.it perspective
A monthly Michelin list is a map of where the inspectors have been eating, and this one says three things. Sardinia is being taken seriously beyond the coast, with a Barbagia osteria and two Cagliari kitchens beside the Arzachena entry. Lazio outside Rome, the Tuscia and the Bracciano and Ladispoli shore, is finally being written down after years of being driven through. And the hotel restaurant is back: 1224 at the Savoia, Da Aurelio at La Posta Vecchia and Quid in a palazzo are all dining rooms with a hotel or a landlord behind them, which is where the money for a serious kitchen now comes from. The practical advice is simple. Book 1224 for the first week of December, when the hotels reopen and the snow is new, book Quid for a Rome evening in October, when the terrace is still open, and go to Mamoiada before anyone else does.
