Costa Smeralda is not one dining destination. It is a collection of very different micro-scenes: Porto Cervo’s polished waterfront, Cala di Volpe’s hotel icons, San Pantaleo’s granite village, Porto Rotondo’s marina tables and the working farms of inland Gallura.

That distinction matters. A restaurant can be excellent and still be the wrong booking for the evening you have in mind.

This is therefore not a ranking from one to twenty. It is a map of twenty distinct reasons to reserve a table: the new opening worth knowing, the Michelin dinner worth crossing the coast for, the dependable Porto Cervo address that does not require theatre, and the farmhouse where dinner arrives as a succession of family recipes rather than an à-la-carte menu.
