Ennismore has signed Delano Puglia, a 76-room resort in Monopoli due to open in 2028. The rooms will include 13 suites, and the plan brings a new Rose Bar, a restaurant by Paris Society and The Source by Delano wellness concept to the Adriatic, according to the announcement published on Tuesday 29 September. Ennismore describes a setting of “crystalline waters, rocky coves, and sweeping sea views” on the coast of the old port town south-east of Bari. It is a signing. The opening month, the architect, the designers, the exact site and the rates have not been published. But it takes the name that, in Ennismore’s telling, redefined the luxury resort in Miami in 1995 to a coast best known for its masserie, the fortified farmhouses of Puglia turned into hotels.
A Paris Society table and a Rose Bar by the sea
The announcement sets out the outline. Seventy-six rooms, 13 of them suites. An all-day restaurant by Paris Society, two pool bars, a lobby lounge and a new version of Miami’s Rose Bar. Wellness under The Source by Delano, set across movement spaces and pools. Indoor and outdoor event spaces, shops, and a membership that gives access to Delano events around the world. The design, the release says, will combine “light-filled interiors, fluid indoor-outdoor transitions and a natural palette”. Paris Society is Ennismore’s own restaurant and entertainment arm, founded by Laurent de Gourcuff, with Maxim’s, Le Grand Véfour and Laurent in Paris among its addresses and Gigi on a rooftop by the Pantheon in Rome. The original Rose Bar, Ennismore recalls, sat “unassumingly in the lobby of Delano Miami” and is credited with starting the city’s nightlife scene; the bar has since returned in Dubai and in Miami Beach.
From Collins Avenue, 1947 and 1995
Delano is a Miami Beach story. The hotel on Collins Avenue opened in 1947, and in 1995 it was relaunched as the hotel that, in Ennismore’s words, marked “the inception of lifestyle hospitality”. Ennismore, the lifestyle group in which Accor holds the majority, has been expanding the brand since 2023. Maison Delano opened on Rue d’Anjou in Paris in April 2023 with 56 rooms and suites. Delano Dubai followed on Bluewaters in October 2024 with 251 rooms, 84 of them suites, and the original Delano Miami Beach reopened in June 2026 with 171 rooms and suites. Delano London, with 67 rooms at Hyde Park Gate, is due in late 2026, and further hotels are signed in New York and in Marrakech, where the opening is planned for 2030. Puglia will be the brand’s first address in Italy, and another resort by the sea after Dubai and Miami Beach.

Monopoli, a harbour inside the old town
Monopoli’s port is its centre. “The harbour, which penetrates into the historic centre and on whose quays buildings have been standing since the Middle Ages, is quite astonishing,” Italy’s national tourism portal writes. The Castello di Carlo V, part of the coastal defences ordered by the emperor, stands on the Punta Penna headland and now hosts exhibitions and cultural events. The cathedral of Maria Santissima della Madia was built in 1107 and rebuilt in the 18th century. Local tradition holds that the icon of the Madonna arrived from the sea on a raft at dawn on 16 December 1117, and that the raft’s beams went into the roof. Along the coast the town has small coves and wide beaches: Cala Porta Vecchia under the 16th-century walls of the old town, Cala Paradiso five minutes by car from the centre, and the fine sand of Capitolo to the south.
The masserie between Monopoli and Savelletri
Delano will arrive on a coast with a long list of luxury hotels, most of them in old farms among the olive groves. In Monopoli itself, Masseria Il Melograno occupies a 17th-century country residence. Around Savelletri di Fasano, Masseria Torre Maizza, Rocco Forte’s hotel in a 16th-century masseria, has a nine-hole golf course, a beach club and a spa; Masseria Torre Coccaro began as a 16th-century fortified farmhouse and keeps its spa in natural caves; and Borgo Egnazia presents itself as a five-star hotel near the sea. The core of Masseria San Domenico is a 15th-century watchtower that belonged to the Knights of Malta. Delano’s model is different. It is a social resort, built around a bar, a membership and a Paris Society dining room. Why Monopoli, and why a lifestyle name
Ennismore gives its own reason. Puglia, it writes, “has emerged as one of Europe’s most desirable luxury destinations, offering a discreet and authentic alternative to Italy’s established resort enclaves”. The choice of brand says the rest. Delano is a social name, built on a lobby bar and a pool scene in 1990s Miami, and Ennismore has carried those ingredients into its new hotels: the Rose Bar in Dubai and Miami Beach, Paris Society restaurants, a membership. Taking them to Monopoli is a bet that the travellers who have made Puglia fashionable want an evening as much as a view. The timing leaves room. By 2028 Delano will have opened London, and the brand that arrives in Puglia will be the one Ennismore will have spent five years relaunching.
The Luxury.it perspective
Puglia’s luxury has grown up in the countryside, behind the walls of old farms, where the day ends with dinner under the olive trees. Delano brings the other version of a summer in the south. The hotel is by the sea, and the bar is part of the point. The two can live side by side, and the coast between Monopoli and Savelletri is long enough for both. For travellers, 2028 is a date to note, not to book: there are no rates, no plans and no opening month yet. For Monopoli, the news is that a name born on Collins Avenue has chosen its coast for its first Italian address.
